FC 25 Rainbow Screen
I can launch my game fine and select my game file but after that I get a rainbow of colours show up randomly and i cannot do anything else I have to use task manager to exit the game completely

Hey dragonbeast54321 Please make a copy and delete the existing settings folder from this location C:\Users\[Username]\AppData\Local\EA SPORTS FC 25 (App Data is usually a hidden folder so it can be changed from the View dropdown.)
You may also need to delete the Personal Settings 1 profile when you launch the game. Let us know how that goes.
If i delete Personal Settings 1 wont that delete all saved progress?

No, deleting Personal Settings 1 will only delete your settings, not your progress. I am glad to hear that it worked.
