It appears the NHL's issues with Quick Resume were the culprit.
I restarted the app fresh and played another game. Objectives registered as normal

I've had Quick Resume issues with multiple games. Especially ones that require an online connection. When you turn the game off, that connection is severed. It doesn't always reconnect or when it does, it seems to not be completely synced. Regardless, glad to hear the objectives are showing as completed now.
