This problem sounds like it's more than just about getting a sim to resume knitting if you look at my previous post. While I am not an expert on the EA code (I do not work for EA), I am a software dev. It sounds like fixing this bug may affect other interactions, which can be tricky. It would need to go through lot of testing to make sure it's not going to break something else. In any case, no one but an EA dev can say how hard it is to fix.
There is a mod out there that fixes the resume knitting issue, I have it, but if a modder can fix it, why cant EA?

A modder doesn't have to do all of the testing an official fix would require. They don't even have to worry that their fix is correct or would cause problems down the road like save file corruption. Their fix might fix the specific issue that people are having, but it's probably a hack and not the correct way to do it. I am not an EA employee or a Sims programmer, but I am a professional software developer and I sympathize with the devs.
