Keep on trying to catch an angel fish even if it doesn't show up for the quest any longer. It's one of the ingredients for ambrosia, so I'm sure we'll need it in the future.
You haven't lost the challenge. It doesn't really matter if you missed a step, as long as you got enough points to collect the rewards for this week. Even if you didn't get all the rewards, there are probably extra points built in. There's still 3 weeks to go, with 2 extra weeks after that, so there's still plenty of time.
Can't do the challenges if they don't show you what they are. I haven't completed this weeks challenge because it stop showing them to me. So can't see how I will be able to complete them when I can't see them the plumbob is gone.. without it I won't see next week challenge either, so as I said they kicked me out of the challenge now. Thanks anyways and happy simming! I'm also in PS4 and it looks they only working on PC having this issue.

Catching an angel fish was the last step of this week's quests for me and you said it was also the last step for you. I got credit for it when I stopped fishing, even though I didn't actually catch an angel fish, and that ended the week's quests so I don't have a plumbob any longer. It sounds like the same thing happened to you. My guess is that fishing in the Crawdad Quarter neighborhood of Willow Creek was the actual requirement.
The Reaper's Rewards panel in my game shows that I completed all quests for week 3, so I expect the quests for week 4 to show up on schedule. I think you should expect that, too, unless your Reaper's Rewards panel says you haven't finished.
I doubt that The Sims 4 bug fix team is only working on PC fixes for these problems. The last update (Oct 1) included fixes for PC, Mac, and Consoles and I expect that will continue to be the case.
