Perhaps taxes are calculated differently on GOG and Steam - I currently can't speak for them. What I can say is that paying sales taxes is a legal requirement (depending on where you're from), so it's something we have to abide by as well.
If you've got further questions about it then I can chase that up for you though.

You are mistaken. Steam and GOG add taxes like everyone else in the world (barring a few expections).
For example here is my latest Steam (sale) purchase receipt (well, can't link to it, but a copy paste).

Could you link me a screenshot of an Origin order where you're being charged tax? That doesn't sound right and I'd like to check it out for you.
