Why does EA take taxes from my games?
Steam doesn't do that, GOG.com doesn't do that, so why does EA feel like it's okay to add taxes when their competitors don't?

Perhaps taxes are calculated differently on GOG and Steam - I currently can't speak for them. What I can say is that paying sales taxes is a legal requirement (depending on where you're from), so it's something we have to abide by as well.

You are mistaken. Steam and GOG add taxes like everyone else in the world (barring a few expections).
For example here is my latest Steam (sale) purchase receipt (well, can't link to it, but a copy paste).
Ostopvm: 1. heinä 12.33XCOM 2 - 12,37€Sid Meier's Civilization VI - 26,99€Välisumma 102,37€ Alennus -70,62€ (-68%) Verot 7,61€ Yhteensä 39,36€ Verot = taxes

Still a valid question. I live in Oregon. No sales tax. Yet Origin is trying to charge me tax on a purchase. Bought it on ebay instead.
- Please I'm about to preorder fifa 21 via ea access ... I'm going to be charged for tax
