That's what I was thinking that it needs to be beaten on Hard and Crazy. I have only beat it on Normal. 

You can actually farm all the hat variants on normal difficulty. You need to beat it on Hard and CRAAAZY to get the boss hunt achievements though.

There is a Gem version as well as a Scrumptious version of all Boss Hunt hats.

While you can earn the Regular, Silver, Gold and Diamond hats from Normal difficulty the game does require you to beat Hard and Crazy for the last two versions.

Hmm... I just earned the scrumptious version off normal mode, although I beat hard and crazy earlier.

That's weird. I certainly never had that happen and scrumptious items always and exclusively came with crazy.

The scrumptious hat is only available on the crazy difficulty and the gem hat is only available on hard.

However, in order for the gem hat to be unlocked you MUST earn all the normal hats.

• Normal
• Silver
• Gold
• Diamond

This means you must complete the normal difficulty four times.  You can play the hard difficulty and win, but you will NOT get the gem version until you have all four normal hats.  This was not the case when the first boss hunt came out months ago.  You could do hard and get the gem version right off the bat and you could select any difficulty right away as well.
