There are actually four bodies on X57, but only three are related to the quest. One of the four will simply update your map, but not the quest. Check the wiki page, it might clear up some confusion.

Your journal shows that you have found two, and one is still required for the quest. The UI is not bugged, it's just a bad design - the main entry says one is still missing, and your "active phase" is that you have found the second engineer's body (Hymes), hence no tick. If BW simply added "Only $MISSINGENGINEER3's location remains unknown" or something, that could clear up the confusion regarding this quest I suppose.
