I found a fix for this in the past.

Try to go to customize, and then try to change the paint and apply. Once the game will make you stuck at a loading NFS logo in the middle of the screen, wait 10sec and then close the game. Once you restart the game you will be able to change parts or sell the cae🙂 Worked for me on my PS5
