It could be potentially due to the engine doing jank when running at a higher FPS, and could become much worse if going further than 300. Otherwise I wouldn't really see for a reason that they capped the FPS to 300.
Though honestly, what kind of beast machine do you need to have to even hit close to the FPS cap of 300?

I don't know the specifics, but I've got a 7800x3d rtx4090 with 300 sticking.

Thats the issue with quite some engines, especially old ones like the source engine used in Apex.
Like medium cpu r5 5600x for 100 dollars, or better 12600k-7600x, and higher than medium gpu rtx 3080 for 400 dollars these days or 4070 ti that's all for 1080p, beast machine?

with the advent of extremely high refresh rate monitors, such as the new 480, 500, 540hz oleds on the market and the refresh rates only going up from there, apex is still living in 2020 when the first 360hz monitor came out, and we should at least get clarification on if removing the cap would cause problems in the game engine.
