I have 500+ Apex Packs to open, so I have at least 150 heirloom shards guaranteed, and so my question is: if I start with 0/150 shards and at certain point I get 150/150 shards can I continue the pac...

@zeno_182You are allowed to stack shards. I have had 300/150 myself. Once you get shards from a pack the counter resets. It doesn't care if you have them already and doesn't affect the odds. I got lucky and got a second set within 50 packs of my first set.
