Hey, as mentioned there isn't a way to buy the knife directly.

@Extremejinks pretty much covers it, but you can find a little more info on the heirloom guarantee here: https://www.ea.com/en-gb/games/apex-legends/about/frequently-asked-questions

Note that the heirloom is not guaranteed to be the knife, and another item (Lifeline's heirloom) will be added to the pool in a few hours.

@EA_Davidis there a chance that in the future there will be added a feature in game's store, which will count how many packages players have already opened, and player can see it? It's easy to lose the count after few months and I would appreciate to know if I'm still about 130 or maybe 10 packages away to reach 500 to ensure a Heirloom for myself 🙂
