I've honestly never had this problem and I have T1 on the jets and all the helos. Skill issue FR. If the littlebird attacks when you pass, but isn't actively following you across the map to cut you off, just keep looping and attacking it, missles pretty useless but the guns will tear it apart. If it is following up across the map, get above it and attack down onto it, if it's at the ceiling of the map waiting for you, go to the below the radar and attack up. It's posts like this that legit ruin any semblance of balance. The littlebird is intended to be a threat, If the pilot is good it'll be hard to kill, if the pilot is hyped on meth and has played the helo for hundreds of hours, you'll probably need more than 2 people to kill it, but you have at least 32 others. I feel like you hit a skill wall and decided complaining was better than adapting, and you're just salty you can't farm helos for free kills anymore.

"I've honestly never had this problem"
This is a fairly rare issue because the immense majority of chopper pilots pretty much ignore enemy jets and spend most of their time farming infantry. It's a shame considering that the nightbird is excellent against both ground and air vehicles.
I've only spent about 15 hours using the nightbird, where this involved roughly 12 h bullying ground vehicles using the 20mm cannons and AGMs. Despite not really having any experience using the miniguns (also, using a controller - no aim assist for vehicles), I was able to bully jets and attack choppers with the miniguns and ignore good jet pilots that were targeting me. No wonder that a pro nightbird pilot on pc is gonna be overpowered with the miniguns considering that a newbie on console (me) was able to be very effective with it.
"Skill issue FR"
Cool story, bro. Feel free to share clips where you're wrecking pro nightbird players with the 25mm jet cannon alone. As I've clearly stated, average nightbird pilots who are just hovering are fairly easy targets (you fan even get them with the attack chopper 127mm rockets easily) Try to be effective against those dancing nightbirds 😉
Also, you're conveniently ignoring that fact that nightbirds can deal damage at a ridiculously high rate to jets even if the jet is moving in a spiral (as in first clip). By contrast, you definitely CAN'T inflict this sort of damage to a dancing nightbird with the 25mm alone.
"If the littlebird attacks when you pass"
It's abundantly clear from the attached videos that the initial attack alone can be sufficient to destroy a jet, which is what's especially problematic here.
"If it is following up across the map, get above it and attack down onto it"
I'm guessing that in your lobbies, the masochistic nightbird pilots are just hovering at a lower altitude than your jet waiting for you to shoot at them. Any non-smooth-brained nightbird pilot would instantly engage in some kind of dance in response to this, making the top-down attack useless.
"The littlebird is intended to be a threat"
You could make the parallel claim that jets are meant to be a huge threat to vehicles and furthermore, because jets have a more specialised anti-aircraft role, they are supposed to be significantly better than nightbird's (which can be very effective against a wider range of target types).
