Preorder bonuses for EA Play Pro
If I upgrade to ea play pro and get the associated preorder bonuses (1 year pass + the midnight bundle), will I still retain them if I buy the game a couple months from launch and cancel the subscription?

I think this content will disappear when your subscription ends as it considered as content for pre-order. The content for pre-order will probably be available later as an additional content, after release of the game.
@ArhnusYes. As long as you overlap your subscription with the purchase of the appropriate stand-alone edition of the game, there will be no interruption or loss of in-game items or bonuses.
As @IIPrest0nII mentioned, if you let your subscription expire without a stand-alone edition, you will lose the respective items.All you can get is a bundle + Pre-Order (Year 1 Pass Pack NOT INCLUDE)

you only retain what you buy, if you get standard, you stop getting the benefits of the 1y pass, you maybe can retain stuff from the pass you got while subscribed, but not the rest, or you might lose all until re-purchase
as personal experience, I lost everything related to Legion of Dawn edition in-game items (customization) for Anthem when I ended subscription and only had Standard edition, and only got my stuff back once I got the upgrade
that's a fairly recent game with live service, so I wouldn't be surprised if this was the case for BF2042
If you want to retain everything, you might need to get Gold or Ultimate edition, or purchase the 1y pass along with Standard
