@Dispackt, you need to own the Premium Battle Pass for this. Do you own the Premium Battle Pass for Season 5?

As per the above-linked article:

Who can create Persistent Servers?
Starting with Update 2.2, owners of the Premium Battle Pass can select a Persistent Server option when Hosting a Server.

@Dispackt, I see it in your 2nd screenshot, bottom left corner. Are you not able to select that option?

@Dispackt, hmm, thanks! I see it now myself as well. It looks like the option has turned itself off in settings. I will pass it on to the teams for investigation.
