I tried with the Series X version (holding the B button) but it doesn't work
I have had this too.
To get it to work.....
Hold R1
Select desired ammo and hold 'O'
Whilst keeping 'O' held, release R1.
The knife may still be there but press triangle to bring your weapon back up and reload.
You should now have the desired ammo type.
