As the question asks I am wondering how on earth to edit the profile character because right now it is it is some guy with a shaggy hat and a face mask and I cant find anything anywhere on how to change it.

Steps on how to change character in profile:
Click on loadouts
For me I clicked on engineer
use left Toggle stick to hover over the bottom left side corner
Hold down left toggle stick “highlight on profile” and done it’s updated.

This. There is a "highlight on profile" when you go to custom, after you select each class.
Go to loadouts. Bottom left. For xbox it was hold x to reset. Press left stick to highlight on profile.
