I resolved this problem by installing the latest BIOS and firmware drivers for all hardware, oh! and buying an RTX 5070 ti to replace my RTX 3080..! I've not had a single crash in 2 weeks since installing the new card but endless crashes before hand. Seems a bit of an expensive solution me thinks..! I'm not sure if updating of the BIOS and firmware drivers done the trick or the card or both.
