By default, you're supposed to hold R for a moment, then select dynamite from gadget slot (so either 3 or 4), throw it with RMB and then detonate it with LMB. I'll give it another look this evening, but the picking up part works the same way for all the gadgets.
By the way, things like rocket gun or AT grenades also are capable of destroying artillery turrets.
