While I would be interested in a full remake, I don't really think it's feasible. Dragon Age: Origins was already a very big game with a long development time, but modern AAA games take an even longer time to develop to reach a quality that gamers expect. I think it would be difficult for a remake to gain a large enough audience to break even, considering the series has lost a lot of its popularity. I agree that some big fans would be willing to spend a lot on a remake, but you need to reach general audiences as well, and they would hesitate to spend even $60 USD on a remake of an old game, unless it's as elaborate as Final Fantasy VII Remake.
I think a remaster by a third party, like Beamdog's remasters of Baldur's Gate and Neverwinter Nights, would be a more feasible option. Enhanced visuals, improved stability, and compatibility with modern consoles would be a good start. Neverwinter Nights recently got new DLC, so your suggestion of additions to romance and Soldier's Peak would fall within the scope of a remaster.
