Some of the original voice actors would love to come back there are a few they would need to replace due to complications with relations with either Bioware or EA like the voice actor for Cullen.
He was also recently arrested for some pretty disturbing stuff, so I think he may have burnt bridges with the entire industry.
There's also the issue of voice actors who have died, such as Robin Sachs (Harrowmont), Geraldine Blecker (Shale) and Peter Renaday (Duncan). Another issue is that SAG-AFTRA's strike against EA (and other studios) has not ended yet, which might impact which actors could get involved, but I'm unfamiliar with the details of that.
As for the appeal of remakes in general: EA's Motive made a remake of Dead Space, so there is precedent, but I remain skeptical due to the scope of Dragon Age. If you look at other studios: Square Enix has a successful (in-progress) remake of Final Fantasy VII, and BioWare's Star Wars: Knights of the Old Republic is getting a remake by Sabre, but I think both Final Fantasy and Star Wars are stronger brands than Dragon Age at the moment.
