I was having the same problem. I decided to perform a full format of the HD and reinstall everything. Since then, there have been no crashes and save times are twice as fast.
Make sure you back up your current game saves. Performing a full format erases everything and take a long time (18 hours for my 320GB system). I suggest doing this before bed when you have to be at work the next day.
Anyway, after setting up the PS3 again and installing everything, all ran smoothly.

there should be no need to have to reformat your hard drive just for buying a new game and trying to play it! there has to be another way.
