I got both Mage and Guardsman codices filled, meaning that all research turned in but nothing with giants however to be fair I've only killed about 3-4 giants in the whole game so it is expected.

Do you remember what enemies you got those research items from? I was trying to kill Templar Guardsman and the rebel mages in Hinterlands from some time without getting anything.

Those were the ones also SPOILER - venatori spellbinders/guardsman(the guys with huge shields) but tbh I didn't really farm them, I got those codices filled as I progressed so don't really know if all of them drop the materials.
