They are different combat roles. In a traditional role-playing game, you have 3 roles: Damage per second (dps), healer, and tank.
Weapon and shield is a tank role, meaning this is a character who draws the enemy's attention and takes all the damage.
Two-handed weapon is a DPS role, meaning this character is better at dealing a lot of damage, but can't take as much damage as a character with a shield.
Archer and double daggers are both DPS characters. The main difference is that the archer attacks from a distance and can change quickly between targets. The archer also has some useful skills that affect multiple enemies at the same time.
