As people illustrated, Launch Options are used to modify a game's behavior for settings that are not necessarily exposed in the game options. To build a case for the development team, just compile a list from the replies on this topic. A variety of games/features are mentioned, from sims and dragon age to APEX
My current use case is for burnout paradise remastered, where it completely refuses to launch on windows 10 no matter what I try, and I can get it to run on my steam deck running ArchLinux up until the intro video that gets stuck on a black screen with a mouse cursor, which is a known issue with a known solution (using the '-skipvideos' launch option)
You will find that Launch Options are mandatory for running older games on modern hardware, as well as modifying a game's behavior for non-standard setups like the resolutions previously mentioned by other users.
Note: regardless of the state of Launch Options, please note that games bought through steam are unable to set Launch Options at all, and instead display a "managed by steam" non-clickable item in place of the game options inside of the EA Desktop App.
