If I close EA app from my open apps it will not open up again when I click on the Icon on my desktop? It also will not open up in apps section or if I go into my EA files.
I have to completely uninstall it and reinstall it again. Why is this?

It's hard to pinpoint what's causing this. With that in mind, I suggest that you try a Clean Boot so we can identify if there's any other app that might be causing this: How to clean or safe boot your computer
In case the problem persists, you can try uninstalling the EA app using Ccleaner. This will clear all old cached files and errors so you can install the app again.
To delete them, you can try using CCleaner to clear out issues and errors.
