Huh. The DIP_STAGED error was common in Origin and due to trying to update the game in a different Mac user account to the one the game was installed to. Try the fix for EA App and see if it works - Download error Origin is not able to download Sims 4 "DiP_STAGED" | EA Forums - 10181246
I only use one user account, I'm the only person using this desktop. I did a deep dive in my files/applications (looking for an exclusion list) and finally tried giving full disk access to the EA app and that worked!
