Just seem to have cracked the nut! This is the best I can regurgitate from memory, sorry.

If you open the first level EA Desktop, another EA Desktop will be within. Inside you'll find 2 similar directories -- EADesktopOutdated, and EADesktoprescaled. The EADesktoprescaled directory is your goldmine! Within should be a EA Desktop directory. That version seems to have the newest content. Evidently they tried to do some sort of update processing, and it broke off, or screwed up some how.

To get things back to normal, set explorer to show the EADesktoprescaled directory, mark the EA Desktop directory within. Do a CTRL-C on it, then move back to the first level EA Desktop. Now CTRL-V the content you've snarred into that directory and things will be back to a functional state.
