i unlinked my ea account for my xbox and linked it to an old ea account i was barely using to play the bf6 beta, after doing so, i realised i didnt have the stuff i had on apex, gw2, and any other bf game, is there anyway to bypass the 6 month wait time to unlink an account?

No, I wish I had better news for you but there isn't a way to bypass the timer. It needs to timeout before you'll get the option to unlink it from that older EA account, and relink it to the Apex one.
A quick heads up on unlinking and then relinking:
