My friend and I are stuck on this fight because it is out of sync on our computers. She cannot see the tentacles for very long, and the left tentacle doesn't take damage. Has anyone had this problem before? If so, how did you get past this level? Any suggestions are appreciated.

This is a known bug which is still being looked into, I too suffered the same issue. Well actually the bug was also with immune ducks.
A workaround for now is to go to local co-op and continue the game from that same point. Finish the Octopus scene and it will save the game, from there exit out of local co-op and you can go back to your original game and continue from that save point.
With local co-op add a controller as well as your keyboard so you can play it solo, this is easily done solo so no need to worry.
