Not 100% positive, but it's probably a licensing issue. Take McLaren for instance and the Logitech logo on the top of their steering wheel. Logitech would probably be less than thrilled if players could just remove their logo from the game at will. And then you have the issue of what to do with the drivers' hands and arms. I presume you would want those gone for the same reason to then, well there go a half dozen more sponsor logos.
I'm not against removing the steering wheel by any means, because I can completely see the why you would want it gone, I'm just saying I think the Dev's hands are tied a bit on this one.

Ah, the old 'can't do it due to licencing' excuse. Always a good card to play, it saves them a lot of work every time.

@antonmorse They'll still be using it in 2040 because it be just as true then as it is now, not really anyway around it I'm afraid unless EA, the FIA, the FOM, and the Formula One Teams all magically decide they no longer like money.

I understand that, but it's far too easy to use as a reason for not including a feature or allowing cars to crash or have mechanical failure.
Other sims manage to include these options, and they have to go through the same licencing negotiations.
