Okay, ...this will be my final post / comment (whinge) on this lack of Safety Car deployment during a Driver Career.
I've just completed Season 5 of my Driver Career. I play with FULL everything, and I even INCREASED Safety Car & Red Flags for Season 5.
Guess how many Safety Cars were deployed during the ENTIRE Season 5 of my Driver Career?
None, ...Zero, ...Zip, ...Naadda, ...Nil, ...Sweet FA, ... During Season 5 of my Driver Career I only saw one (1) VSC 😏 I even got excited as I thought that the VSC may trigger a Safety Car, ...but... 😞
This is beyond frustrating...
Oh!, ....and in Career Mode why does it regularly (constantly) RAIN ? 😬
I've been real patient with F1-25, ...but these ongoing issues are forcing me to shelve it for a while...
What length of races are you using? I noticed a lot more safety cars when my knees got healthy enough to increase the race length from 25% to 35% races.

I use Full Practice, Full Qualifying, and Full Race Distances (100%).
I have always used 100% full race distances with all my F1 games, as I LOVE the racing strategy involved which includes pit stops and, where required, ...Safety Cars...
As others don't seem to have my lack of Safety Car issue, I'm just placing my personal experience down to an unfortunate, isolated, event. Too Bad, ...so Sad for me... (this game is still shelved at my place).
I should have mentioned that I only do custom races. I know there was a problem last year with mid-race saves for 100% races on the PS5, so maybe 100% races are a challenge for the PS5 operating system. I recently have fallen in love with the Power Pack DLC endurance races on the Playstation-only Gran Turismo 7 and the mid-race save feature is half-baked. Given that Sony owns the Gran Turismo studio, it says something that they released a half-baked solution for long races. (Don't worry EA and Codemasters, I will still buy your game every year for the exclusive circuits like Qiddiya, Madring, and Monaco!)
So, it might be impossible for EA and Codemasters to make 100% races in career mode work well on the PS5. Maybe you have to compromise with 50% races. Or maybe just wait until 2027 comes out. I've heard rumors they might be using a new game engine, but for obvious reasons it's way too early for EA and Codemasters to confirm these rumors.

Just thought of something for your issues with 100% length career mode. Do you have car damage on? If there's no damage, then the AI opponents can just keep driving after a collision and there's no need for a safety car.
