Personally, I would love to see him back at Espanyol - which would be indeed like Starting Over
After not being so convincing at the absolute top tier of teams (Paris, Chelsea), I think Pochettino is a good manager but he falls short to be in that elite group.
So, Man United doesn't feel like the place to go for him. Girona has no reason to say goodbye to their manager. Bayern MUnich is completely leftfield, so I'd see him most likely at either Brighton (where De Zerbi left and Farioli refused) or Espanyol.

We are on the same mind. I have never felt Poch would do good at a top, top club. He does best with younger players, lower expectations and playing the "under dog" role. You could see at the end with Chelsea his players were playing better as they had more experience but Poch also likes having a say in transfers and Chelsea would not give that.
IRL I see him failing at United if he goes there. United, Bayern and Barca would be more one year hits for Poch in my opinion so you are correct, Brighton or Espanyol is the best option..

Interesting angle here. In many careers the club is a known fact at the start, and the manager is revealed shortly after. This time it's the opposite with the manager being revealed, whilst we're left in the dark in terms of which club it's going to be. Very interesting.
