I was wondering if I play EA Fc on the old gen version. If I logged onto new gen. Would my ultimate team transfer over?

We have a whole article that goes into how dual entitlement works here. But I think that the important part for you is:
All progress you make or content you acquire within EA SPORTS FC™ 24 Ultimate Team (including players, items, coins, FC Points, match record, and leaderboard placement), as well as all progression in VOLTA FOOTBALL will transfer from PlayStation 4 to PlayStation 5 and back, or Xbox One to Xbox Series X|S and back. Progress within all other modes including Online Seasons, Co-Op Seasons, Manager and Player Career, Clubs, etc. will be specific to the console you are playing on and won’t transfer between consoles.
In short: Yes. Your Ultimate Team will carry over if you switch to the next gen version.
