Stopping Evolutions at Level 2 of 3 to start a new Evolution

Good Day, I had a questions regarding Evolutions that I wasn't able to find online anywhere. Questions is this: Can I start a player on "Centurions Attacking Mid" and work to complete 2/3 stages...

if the player appears as an option then you can use him, if he does not appear than you cannot. people have in the past used uncompleted evo players in another evo, so it can be done if all the other stat requirements are met.
