My career save was overwritten without me wanting it

I don't think you can. This game autosaves over the existing save. So if you didn't want your old save overwritten, you should have kept two saves before changing clubs. Then the game would just have overwritten one of the save slots. I'm not a fan of the new autosave myself. But once aware of it, one just has to keep an extra save in these situations...
