I get it - used to feel the same way. Started career modes with a lot of ideas and signed maybe 10 players in the first season. Often young players with a huge potential. But then the save already started to feel a bit finished with no more exciting transfers for future seasons. And then there's nothing else to do than start over with a new club.
Since then I've started to limit myself to 4-5 transfers per season, give or take, some of them also shortsighted deals for experienced players or loan deals. This enhances the duration of my saves greatly, and I always keep some business ahead of me. That's also why a player out on loan isn't a problem for me, cause I can just sign him in the next window or the one after that, if his profile/price etc is a good fit.
In my opinion Career Mode peaks around season 4 or 5, where most of the squad have been replaced by my doing, combined with my first youth players finding their way into the rotation.
