Figured out why its so bad
The basic problem with FC 25 is that it feels like the game is actively fighting control input and trying to stop you doing what you want to do.
It's clear the Dev's very much struggle to bring balance to gameplay, and that in order to close skill gaps they take shortcuts which feel really cheap. For instance your players will run into invisible force fields when running to make a header so they don't get to the ball, or your central defenders will suddenly run out of position to go pick daisies in a nearby park while the opponents central forward just walks through the middle of the park. Your defenders foot clips through the ball when making a tackle, or just won't tackle altogether and just walk over the ball.
These are just a few simple examples of how the Devs try to balance the gameplay by handicapping players, and stopping them from doing what they want to do. It's kind of the cheap way of doing it, and when it becomes so obvious it breaks the enjoyment of players.
Anyone having studied game design, know there are basic principles to which a Dev should adhere. One of them is to make a game feel fair, and that the control of the outcome is seemingly within the hands of the players. Unfortunately they have broken the rules here time and time again. I don't know if this is because they lack ability, or because they are forced into doing this to maximise profits off of the micro transaction dynamics with FUT.
Basically after the "updates" we have a through ball spam simulator, where there is one way to score. I have a feeling that this was done so all the FUT players would spend coins to buy high paced strikers.
