Not only can you play the Xbox One version on your Series S, but FC 25 comes with dual entitlement, meaning you'll have access to the Series X/S version of the game too.

Hi, my son downloaded the Xbox series one version to his Xbox series s console and he’s realised this means he can’t play against friends. I’ve read about the dual entitlement but that talks about when someone gets a new console. How do we upgrade the game on the same console? I’d be grateful for simple instructions as I’m old and my son is impatient, ha ha!
Looks like there’s no way to play with friends who are using the XS if you are on an Xbox One. I have an older Xbox one and I can’t play online with any of my buddies. Pretty lame EA!
