Classic Passing vs Accuracy and Power Passing

I am familiar with the Classic Passing, but I have a few questions about the new types of Accuracy and Power passing you can do in Madden 24:

1. On accuracy passing, I tried to move the left stick after I threw the pass to change the placement, and nothing happened.  But before the pass the left stick only controls scrambling.  So how exactly do you use the left stick to control passing placement?

2. If I am playing against my friend, if I choose Pro, is accuracy and power passing not available?  Does choosing Pro force you to do Classic passing?

3. If I choose Pro and my opponent chooses All-Pro, will his defense be better against me, and will my defense be worse?
