We have 40 new shoe options and a bunch of great new faces and body build for COACHES - but the same old lame options for faces remains when trying to edit a PLAYER - and now we can’t edit body types...

It's hysterical. This is the same issue every single year when this game comes out - even when they had the sizing scale for player models, it wouldn't even work. EA does not care whatsoever.
If we're lucky, it'll take hundreds of complaints, messages, posts, and tags to even get some sort of acknowledgement from their joke of a team. Then, MAYBE, it'll get patched ~3-4 months from now.
