Same here, I've rushed for over 1000 yards today and received zero or just a few yards. Curious to see how this gets resolved. Restarting the game doesn't help, walking away from it for a few hours then returning doesn't help, it's just flat out not tracking rushing stats. All other stats have progressed.
I actually compared it and the stat that's tracking is points scored vs. rushing yards. So until they patch the bug you'd have to score 2,000 points to complete it. very weird bug.
