You can do it with ME3 if you're completely disconnected from the internet. If the game doesn't recognize an internet connection, it will skip online authentication if the game has authenticated at least once before.
Following up on what fredvdp said, you have to COMPLETELY disconnect from the internet to make this work.
That means unplugging your Ethernet cable, turning off your wireless card, or otherwise disabling your NIC.
(NOTE: You only have to do this until you start the game, then you can reconnect.)
