Graphics quality is terrible because ME3 Config Utility only detects my integrated graphics...

Try going to the NVIDIA control panel, go to "Manage 3D settings" and then the tab "Program Settings". Select ME3 from the drop-down menu (if it's not there add it) and change the graphics processor to your gt540m, not default.
