uhh correct me if i am wrong but as much as i found out, ressources are entirely random, at least from mining with the nomad.

you can also deconstruct items in your inventory gives a popup of what you get each time
Aside from mining and planet scanning, you can try deconstructing and buying from vendors or your buy/sell station on the tempest, you will have lots of junk that you can sell to vendors. That was one I did on my first playthrough when I badly needed to construct my first black widow.
