I think Shepard is always mentioned as being an L3 biotic even if you play as a non-biotic class. This kinda makes sense, though, because you can have biotic bonus powers.

Liara makes a reference with her time capsule for a biotic shepard, and there's a conversation at the party during the citadel DLC(which you can also trigger if you're not a biotic but take a biotic secondary power). And kaidan makes a small reference in the first game. There's no mention in the second game at all.
Those are the only time your class ever changes things.

For Ryder, the only difference is whenever you jump or dodge, if you biotic you get a blue biotic glow instead of the jump jet, dont think it does anything, just visually different.

During Cora's loyalty mission when they run into the Mass Effect field generator keeping the hull of the Asari's Ark together, Ryder will comment on the mass effect field generator causing them headaches as well as Cora.
Also all the comments on Ryder using Biotics to slow their descent on Habitat 7 are wrong, because regardless of of what your starting class you pick you will only unlock the biotic jump/dodge after unlocking the profiles from S.A.M and selecting either the Vanguard or the Adept profile.

Yup that's right I forgot about the asari ark, a little strange that Ryder didnt help with the shields with sarissa & cora

Samantha Traynor says if Shepard had been something along the lines of if Grissom Acedemy had opend 20 years earlier a Biotic Shepard would have been sent there, when she gives you the Grisssom Academy:Emergency Evacuation mission.

Kaiden in ME3 will also make a hilarious comment if you bring him to the ardak y... have not a clue how to spell it, when Samara floats down. Think she does this when your finding her daughter. Kaiden was romanced if that makes a difference.
