@FflewFflam Sorry for the late response. It's strange that rebinding the keys wouldn't help, but perhaps something else is interfering. I'm referencing ME1 for this, but the principle applies to all three games. Please try binding the Use/Sprint interaction to a key you wouldn't normally use for anything, for example the = or comma key, maybe right-shift, whatever is totally free. If you can't interact with an item or another character, go back to the key bindings settings and make sure the change you made stuck, and if it did, bind Use/Sprint to something else and try again.
If that doesn't make a difference, please test in fullscreen, borderless, and windowed modes, and let me know whether you can interact in any of those.
If this still doesn't help, try again, but this time in a clean boot. I know you did it before, but maybe not in combination with shutting down other tasks and switching the key bindings.

Go through the Task Manager's background processes list and shut down anything that doesn't absolutely need to be running, for example MSI Afterburner or capture software. Don't open anything else aside from the MELE and Origin. Here again, make sure the key binding you saved in the previous session is still showing, and try a few different keys if the first doesn't work. You don't need to change everything; just stick to Use/Sprint for ME1 or the equivalents for ME2 and 3.
