I am playing this game, But would like to start over again, like total new game, I can delete the save, but Origin is saving how long time i have played, and more, is it possible to reset everything ??

The Origin shows total hours played over multiple characters. But it's just that, total hours played. I don't believe that can be reset (and why would it need to be reset). You can track how long you've played a certain character inside the game statistics, it won't show in Origin client.
Starting a new character from the main menu is completely fresh. New game+ (after you've finished the game once) will start a new game with an existing character and skill poinst earned.
If you want everything reset, settings and keybinds etc. you can go to <user>\documents\bioware\mass effect andromeda\save and delete everything (career* files are your saves, prof* files are your settings)
