I found it if anyone else is wondering.
You have to go to your garageselect the car you want to drive
go to "Handling Tuning"
and scroll all the way to the bottom of the list.
what a strange location.

Just bought it, Deluxe edition PC
Rigged my Logitech G25 wheel to it, and it doesn't supports the clutch and the shifter (the 6 gears, plus reverse)
As i see, you can only "map" the paddles (on the wheel it self, like f1 paddles) And the secuencial shifter (+, -) not the H style shifter....
When will this be implemented, as well as a Logitech g25 default profile,

Thats correct. I have a G27 and it's the same thing. The game doesn't support a clutch and the gear stick. Not to mention theres no redline on the tachometer in game which makes it a pain to know when to shift. If I would have known this I don't think I would have bought the game. In fact, the gameplay using a steering wheel feels so broken it's not even funny. I don't know about you, but I found it near impossible to use the steering wheel. The driving mechanics (especially when drifting) feel unresponsive and illogical.
I was expecting the game to feel like maybe GRID or Dirt physics (the standard of arcade racing physics with a wheel, imo) but it feels horrible and it's unplayable with a steering wheel for me.
Even the shifting with the joystick on a controller feel very clunky. Downshifting is way too slow, especially if you crash and it starts you in 5th or 6th gear.
Lately I've just been playing with a controller which is frustrating considering the price of a G27 and my expectations for this game.
Like... did anyone play the game with a steering wheel or the manual transmission before it was released it?
It feels as if they rushed the hell out of it because people were pissed there was no manual option to begin with.
Its upsetting to see the direction video games are going nowadays.
