I dunno how this forum works, so if I can't manually mark this as solved then I'd request that someone who can mark it as solved.
Just wanted to put this here in case anyone who is having similar issues as I did can maybe find this useful.
I've never had issues with temperatures before, so this caught me off guard until I discovered it.

So, my game would crash seemingly randomly, but crashing pretty consistently between 20 minutes to an hour after initial launch of the game and after exiting from the garage.
It turned out to be my graphics card overheating and thus the game just hanging for a few seconds and crashing to desktop. Out of my 30 or so crashes (probably over-estimating) only one or two have been blue-screens. Don't know what caused that, but I assume it was just a worst-case scenario for an overheated part.
CPU was always fine, I assume, but ever since I installed software to manually control fan speed to cool my 1080 better, I have never had a crash. It's been three days now and the game has been running just fine. I have all settings on ultra and achieve 60fps pretty good.

If my specs are wanted, I have a:
AMD Ryzen 7 1800x
GTX 1080
32GB RAM
The software I use to monitor my temps and fan speeds:
Corsair iCue - For temps and lighting control
Corsair Link - Just temps, and some settings for that but I dunno how alerts are supposed to work
Gigabyte App Center, more specifically their System Information Viewer within this program. - I use this to control all 6 of my case fans.
EVGA Precision X1 (Steam) - I use this to manually control my GPU fans.
When I play the game I typically just put all my fans, case and gpu, on full speed and it keeps my game running fine. CPU never gets above 60C and gpu never gets above 70C.
